Happy National Spinach Day! Today is the day to celebrate our beloved leafy green that is packed with nutritional value and delicious flavor. We absolutely love how you can use spinach in just about any dish – from salads to side dishes to even adding it into your smoothie for an extra boost of goodness. 

Spinach is also coming into it’s peak as we gear up for the spring. So it’s obviously the perfect time to celebrate and enjoy its deliciousness. Plus, you get SO many benefits from eating spinach. For example, spinach has one of the BEST sources of iron. It is also chalk full of calcium, folic acid, fiber, protein, and vitamins A, C and K. 

For National Spinach Day this year, we are sharing a quick and simple recipe for a nut-free and dairy-free version on pesto. We love pesto. It’s such a great addition to any dish to add a pop of flavor. The best thing about this dish is that it is allergy friendly for those who may not be able to have nuts of dairy. It is also interchangeable with basil, so you can substitute spinach for basil any time when making this recipe. Add it to chicken, pasta, or use it to make your next pizza. 

Ingredients:

3 – 5 garlic cloves

1/4 cup olive oil

2 cups fresh spinach leaves

2 tbsp. nutritional yeast

1/2 tsp. sea salt

optional – pinch of red pepper flakes

Instructions:

  1. Place all ingredients in a food processor. 
  2. Blend until everything well integrated. Adjust salt to taste.
  3. Serve with whatever you choose!
