Mushrooms are powerful stuff! They have been revered in the Eastern world as one of the most powerful medicines. As they come into their peak season, we are excited to share a recipe that makes mushrooms the star ingredient! 

Mushrooms are actually classified as fungi because they are so distinct from everything else like animals and plants. These distinct and powerful fungi are extremely beneficial to our health, too! They house tons of minerals, including but not limited to selenium, niacin, copper and potassium and also are a great source of B-complex vitamins. Adding mushrooms into your regular routine can have some amazing affects. There is a strong link between eating mushrooms and reducing your risk of cancer. Mushrooms are also a high energy food which helps you stay full longer. 

Filled with goodness and antioxidants to protect you from chronic diseases, mushrooms are full of benefits that should be added to your diet. And there are so many fun ways to make them! We have whipped together a great recipe for stuffed mushrooms with cream cheese and bacon. Just in time for today’s holiday’s festivities! 

Ingredients

1 lb. whole mushrooms (fresh)

1 tbsp. oil

2 cloves garlic, minced

2 slices bacon, cooked and chopped

1 package (8 ounces) cream cheese, softened 

1/4 cup grated Parmesan cheese

1/4 tsp. pepper

1/4 tsp. salt

1/4 tsp. cayenne pepper + extra for sprinkling at the end

 

Instructions

  1. Heat oven to 350 degrees F. 
  2. Wash the mushrooms. Once dried, separate the caps and stems. Chop the stems as finely as you can. Set aside.
  3. Heat 1 tbsp. oil over medium and add garlic and about 1/2 of the stems chopped up. Stir and heat until most of the moisture is gone and then add the rest of the ingredients, stirring until mixed smooth.
  4. Fill each mushroom cap with a nice heaping spoonful of the filling and place on a cookie sheet. Top with a little extra cheese and cook for approximately 20 minutes, until the tops start to look golden.
  5. Enjoy!
