It’s Sunday, so LETTUCE celebrate a little more before the new week (see what we did there?). Spring means tons of produce starts to bloom and move into their peak season. And today, we are celebrating a leafy green that is used in a multitude of recipes – lettuce!
Have you ever noticed how you only find lettuce in the produce section, and never canned or frozen? That’s because the leafy green has a water content of 95%, making it on available as fresh. Here’s something else you may not know – lettuce is actually part of the daisy and thistle family! While lettuce is know as “rabbit food” for having so little calories, it actually possesses some great benefits as well!
Lettuce contains alkaline properties, so it helps to keep your body in acid/alkaline balance. When you’re balanced, you reap great benefits such as more energy, clearer thinking and restful sleep. In addition, lettuce is a good source of fiber, vitamin C and beta-carotene to promote a healthy heart.
Since lettuce is now in peak season, we got in the kitchen to fix up a quick and simple recipe with lettuce as the main star.
Ingredients
4 leaves from a heart of romaine
8 slices of bacon, cooked
1 large tomato, diced
1 avocado, sliced thinly
Instructions
- Clean lettuce. Lay down flat on your serving dish.
- Add two slices of bacon to each leaf.
- Place a few slices of avocado at the larger end of the leaf.
- Spread diced tomatoes on top of each leaf.
- Optional – add your favorite aioli or sauce! Serve immediately.
