It’s Monday – so we’re going #meatless of course! This week, we are bringing a new spin on a classic comfort food: mac and cheese! It’s always fun to experiment new ways to make classic dishes. You will need only 5 ingredients and approximately 20 minutes to make this meal. Perfect for those nights when you don’t have much time or just don’t really feel like spending too much time in the kitchen.

Ingredients:

2 1/2 cups broccoli florets (approximately 2 medium stalks)

1 cup dry white quinoa, rinsed and drained

2 cups veggie broth or water

1/2 cup water

1/2 nutritional yeast (you can use parmesan if you wish to use dairy) 

 

Instructions: 

  1. Add broccoli, quinoa, broth, and water to a pot. Bring to a boil.
  2. Once boiling, cover and lower heat to simmer for 15 – 20 minutes. You want to make sure the liquid has been absorbed and the quinoa is fluffy.
  3. Stir in nutritional yeast (or parmesan) and serve! Simple as that.
