We are kicking things up a notch for dinner tonight. So get ready for a flavorful (and SPICY!) meal that everyone will love with our chipotle chicken thighs.

We’re not ones to toot our own horns, but these chicken thighs are AMAZING. Cooking the chicken in a cast iron skillet give you the perfect amount of char, and they are dressed up with a dangerously delicious sauce that will leave your tastebuds begging for more.

And whipping this dish up is so easy! First, you give each thigh a good rub with spices to lock in some tasty flavor. Pop the chicken to cook in your skillet, and while they cook, add everything together for the sauce and blend. Once the chicken is cooked, add the sauce and BAM. The most delightful dinner. We paired these chipotle chicken thighs with some roasted vegetables, and it was PERFECT! But seriously guys, paleo and non-paleo alike will absolutely love this dish.

Ingredients

1 package chicken thighs

2 tbsp coconut oil

For the rub – 

1 tbsp. chili powder

1 tsp. paprika

1/2 tsp. cumin

1/2 tsp. chipotle chili pepper spice

1/2 tsp. coarse sea salt

1 clove garlic, minced

For the sauce – 

1 cup canned coconut milk

1/2 tsp. chipotle chili pepper spice

1 tsp. liquid smoke

1/4 cup chopped fresh cilantro (parsley works well too!)

For garnish – 

Juice of 1 lime

Chopped fresh cilantro (or parsley)

 

Instructions

  1. Begin by heating a large skillet to medium high heat.
  2. Prepare your chicken thighs. Mix together ingredients for the rub, brush each pork chop with coconut oil. Rub each side of the pork chops with spices, and use remaining oil to coat your skillet.
  3. Cook your chicken for 6 – 10 minutes per side, until fully cooked with a nice char on each side.
  4. While the thighs are cooking, mix together coconut milk, chipotle pepper, cilantro, and liquid smoke in a blender or food processor until smooth.
  5. Once your chicken is cooked through, pour the sauce on top. Reduce heat to low, and scrape any bits of rub seasoning to add to the sauce.
  6. Garnish with juice of 1 lime and extra cilantro (optional) and serve immediately.
