On a day like today, sometimes you need to just make your own sunshine. And the best way to do that is by making these coconut lemon energy balls.

These bright, poppable bites are the perfect to-go snack when you’re on the run or just need a quick bite. They are completely guilt free, and give you just the right amount of energy when you need them. Add them to your breakfast routine or simply grab one from the fridge if you need a little pick me up in the afternoon. We promise that these tart, energizing bites will brighten your day with just one bite.

Ingredients

Dry ingredients – 

1 cup gluten free rolled oats

1 cup unsweetened shredded coconut

2 tbsp. hemp hearts

1 tbsp. chia seeds

1/2 tsp. maca powder

1/4 tsp. turmeric

pinch sea salt

Wet ingredients – 

1/3 cup maple syrup (or agave/brown rice syrup)

1/2 lemon, juiced

1 tbsp. lemon zest

1 tbsp. coconut oil, melted

1/2 tsp. almond extract (or vanilla extract)

Extra coconut for rolling in

Instructions

  1. In a food processor, blend all the dry ingredients until well combined and oats are chopped up. Add in the wet ingredients and pulse until it forms into a sticky dough.
  2. Transfer mixture to a bowl and refrigerate for 20 minutes. Remove from refrigerator and form/roll into 12 balls. You have to work the mixture and flatten it out in your hand a few times before trying to roll it but the mixture it sticky and holds well after flattening it out a few times!
  3. Roll in extra coconut if you want.
  4. Store in a airtight container in the refrigerator for up to one week.
