Happy Meatless Monday friends!

Who says you need dairy to have creamy sauce for your pasta? We have a recipe that is creamy, spicy, all without using any animal products. This minimal ingredient recipe is bound to be a best-loved dish with you and your loved ones! We kept this recipe vegan AND gluten free, but feel free to substitute for other pasta if it fits your fancy!

For the sauce, all you need is a high-power blender to mix all of the sauce ingredients. However, if you don’t have a blender, you can just soak your almonds overnight to make sure they will blend smoothly in a regular blender. You don’t have to just use the sauce for this pasta dish either – you can whip is up anytime to add on top of potatoes, veggies, really anything! 

Ingredients:

1/2 cup whole, raw almonds

1/4 cup non-dairy milk, unsweetened

1 chipotle pepper in Adobo, with a little sauce for an extra kick

1 clove garlic

3/4 cup water

1/2 cup fire roasted tomatoes from a can

1 tbsp. lemon juice

1/2 lb. pasta

1 tbsp. fresh cilantro, chopped

 

Instructions:

  1. Place the almonds, milk, water, chipotle, garlic, tomato, and lemon juice in a blender and process until smooth. Season with salt and pepper.

  2. Boil pasta according to the instructions on the box. Drain and place in a large bowl.

  3. Pour chipotle sauce over pasta and mix well.

  4. Garnish with chopped cilantro.
