The time of year has so much to offer, and we absolutely love it! It’s still warm during the day with the evenings getting nice and chilly, apple picking is back, and the amount of delicious in-season produce available is incredible. So we wanted to take advantage of our produce bounty and make something that is snackable without being extremely unhealthy.
These green bean fries are ridiculously good. You only need a few key ingredients and they bake up in under 20 minutes – the perfect snack recipe! Nutritionally, green beans provide the body with lots of fiber and protein. They are also very low in fat, while containing antioxidants, Vitamins A and C, folate, magnesium and potassium. The combination of these nutrients helps prevent diabetes, cardiovascular diseases and cancer. So this snack is tasty AND good for you – a total win-win if you ask us!
This recipe is perfect for this time of year because green beans can’t grow in cold weather. So now’s the time to enjoy these crunchy bites before their season comes to an end.
Feel free to dip them in ketchup, honey mustard, or really any sauce you choose – they go with just about anything!
Ingredients
200 grams fresh green beans, washed and ends trimmed
1/2 cup flour
2 flax eggs (2 tbsp. ground flax + 5 tbsp. water, mix and let sit for 5 minutes)**
1 cup panko
1 tbsp. garlic powder
Pepper, to taste
Instructions
- Heat oven to 425 degrees F. Line a baking sheet with parchment paper, set aside.
- Place flour and flax eggs in separate bowls. Add panko, garlic powder and pepper in a separate bowl, mixing well.
- Dredge beans in flour. Then massage each bean with the flax egg until fully coated. Toss in the panic mixture and lay flat on baking sheet.
- Bake for 10-12 minutes, until golden and crispy.
- Serve immediately.
NOTE: If you wish to use eggs, you can substitute flax eggs for 2 eggs, lightly beaten.
