We love potatoes. We LOVE tacos. So of course, when we had the opportunity to pair the two together – it was a match made in heaven!
These tacos contain just a few key ingredients, and the rest of the toppings are up to your imagination. Top them with avocado, onions, tomatoes, parsley or cilantro, vegan cheese…the possibilities are really endless. It’s a great dish to involve everyone in the family or to make while hanging out with your friends.
The best part about this recipe – we can actually promise you that there will be absolutely no leftovers. Yes, they’re that good.
Ingredients
4 – 5 small russet potatoes, chopped into small bite-sized pieces
2 tsp. cooking oil (coconut or avocado works best)
1/2 tsp. cumin
1/2 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. pepper
1/2 tsp. salt
1 package tortillas
Toppings –
Lettuce
Tomatoes
Avocado
Parsley (or Cilantro)
Red Onion
Instructions
- Add potatoes to a pot and cover with cold water. Bring to a boil, and took until fork tender (about 10 – 15 minutes). Once done, drain well.
- Heat a large skillet over medium heat and add olive oil, potatoes and all the spices. Stir until all the spices are evenly incorporated and then arrange in a single layer. Let potatoes cook for 3-5 minutes, until crispy, and then flip and repeat.
- Time to plate – start with a little lettuce, then add potatoes. Top with whatever suits your fancy! We added avocado slices, red onion and parsley to ours. ENJOY!
