They say breakfast is the most important meal of the day, so why not enjoy it!?

Friends, are you tired of the same old breakfast routine? We feel the same way! Sometimes you just need a break from cereal, eggs or (in super busy times)ย grabbing some sort of protein bar before you run out the door. Well, we are here to change your breakfast game with our paleo dish of the week.

Our loaded breakfast sweet potatoes are not only super filling and nutritious, but are wonderfully delicious too! Plus, it’s a fun way to change up the way you think and eat sweet potatoes. Sweet potatoes are a great source of vitamin A, vitamin C, manganese, copper, pantothenic acid and vitamin B6. Enjoying them for breakfast also helps you start the day off with a good source of your daily potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus. Add to that the antioxidants from your fruits and the protein from the almond butter, and you will be fueled to take on whatever comes your way!

This recipes is paleo-, dairy free-,ย vegan-, and gluten free-friendly! So even the pickiest of eaters will enjoy it. It’s also such a fun recipe to get creative with. Feel free to mix and match different fruits and nut butters to find what works best for you. If you come up with a fun combo – let us know! And even though these are labelled as a breakfast food, you can always enjoy these sweet potatoes ANY TIME. Have them for breakfast, lunch, dinner, a snack or even dessert!

Ingredients

3 small-medium sweet potatoes

3 tbsp. almond butter

Toppings

Blueberries

Strawberries

Coconut flakes

Instructions

  1. Preheat oven to 375 degrees F. Wash your sweet potatoes and poke them a few times with a fork. Cover in foil and bake for 1 hour, or until sweet potatoes are tender to the touch.
  2. Let potatoes cook for 10 minutes. Add 1 tbsp. almond butter per potato.
  3. Top with your favorite fruits and coconut shreds. ENJOY!
