It’s Superbowl Sunday! A perfect time to get together with friends and family to eat some goodies and make memories.  One of the best parts of Superbowl Sunday is all the delicious food that is made to share. We all love to indulge here and there, but you’ll usually find heavier items that are loaded with not so great ingredients (lots of sugary and fatty snacks).

Part of our mission is to help our community members live a healthy lifestyle, no matter what. So we wanted to share a simple and delicious recipe that you can whip up just before the game starts. All you need are three main ingredients – what could be better!? 

This snack is a healthier alternative to snacks that you would normally see at a traditional Superbowl party. But we promise that it is just as tasty. We hope you love it!

Remember that with this recipe it’s all about having fun with what you have available. You can load up your bites with whatever you want – beans, cheese, sour cream – whatever you like best and what works best with YOUR lifestyle. This is a great base recipe for a quick and delicious snack for any time. 

Ingredients

1 medium jewel sweet potato, sliced into rounds about 1/2 inch thick

1/2 avocado, diced

3 slices of cooked bacon, roughly chopped

Olive oil for drizzling

S&P

Lime juice to taste (optional)

 

Instructions

  1. Preheat oven to 400 degrees F. 
  2. After slicing your potatoes, drizzle with olive oil, salt and pepper. Bake for 20 – 25 minutes, until slightly charred.
  3. Assemble bites!
    1. Top your sweet potato with diced avocado and bacon. 
    2. Add a squirt of lime juice to your taste (optional) and DIG IN.
