Today is just one of those days where I’m craving something deep fried and delicious. The best art of our mission at Cornucopia is finding fun ways to turn our favorite comfort and deep fried dishes into something that is healthy AND delicious.
This dish elevates your standard onion rings in multiple ways. For one, we have minimized the amount of ingredients used. With less than 10 ingredients, you will know exactly what you are putting into your body. We also bake the onion rings instead of frying to offer a simple fix to make it a healthier option when you are craving this normally fried food.
We are excited to share this simple and fun paleo recipe with you to help curb those cravings when we would normally hit our local sports bar for a greasy treat. We hope you enjoy!
1 large sweet onion
1/2 cup almond flour
1 tbsp. paprika
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. oregano
1/2 tsp. thyme
1/4 tsp. cayenne powder
- Preheat oven to 425 degrees F. Slice onion into rings.
- Whisk eggs in a small bowl. Add flour and spices into another bowl.
- Dip each ring into the eggs and shake off any excess.
- Then dip each ring into the almond flour mixture and place onto a baking sheet lined with parchment paper.
- Bake for 8 – 10 minutes then flip and bake for another 8 – 10 minutes.
- If the onion rings are not as crispy as you’d like, turn on the broiler for 1 – 3 minutes. Make sure to keep an eye on them so they don’t burn.
