At Cornucopia, we are highly committed to eating the freshest, most in-season produce during any time of the year. When you eat seasonally, you save money, help decrease your carbon footprint, and esnures that you are eating foods when they are the best tasting and most nutritious.

So, for this week’s Seasonal Recipe, we are whipping together one of the easiest recipes out there – hummus! But instead of chickpeas as the star, we are using beets since they are coming into season!

One thing to remember about beets is that you can eat the WHOLE thing. Greens included. In fact, beet greens are equally, if not more, nutritious with nutrients that can strengthen your immune system, support brain and bone health, and so much more. Beets themselves contain high levels of manganese and potassium, and they are a great source of vitamins B and C.

All around, beets are an amazing root vegetable that you can incorporate into your diet. Plus when you’re making hummus with it, you know you’re in for a delicious snack.

Ingredients:

1 3/4 cups cooked beets

1/3 cup tahini

2 tbsp. lemon juice

2 tbsp. olive oil

1 clove garlic, chopped

Instructions

  1. Add all ingredients into a food processor and blend until everything is mixed well. If you want a thinner consistency, add 1 tbsp. of water at a time until you reach what works best for you!
