We are spending our #seasonalsaturday warming up with some delicious AND local winter squashes. Squash is so versatile – you can steam it, use it for soup, or roast it up plain. Our recipe calls for just 3 ingredients – easy peasy!
For our recipe, we used butterkin & buttercup squashes. Butterkin squash is a new variety of butternut squash that blends butternut and pumpkin squash together. It has a sweet, smooth texture. Buttercup squash has a similar texture to Kabocha squash but with a sweeter taste. Add to that a little maple syrup, and you will feel cozy and ready to welcome in the holidays.
Ingredients:
2 Winter Squash of your choice
2 tbsp. maple syrup
Olive Oil for drizzling
Instructions:
- Preheat oven to 425 degrees F.
- For this recipe, we sliced one of our squashes in half and scooped out the seeds. The other we cut into slices.
- Drizzle with olive oil and cook for approximately 20 minutes.
- Pull out of the oven and drizzle maple syrup on the squash. Cook for an additional 15 – 20 minutes, until fork tender.
- Let cool and DIG IN!
