Casseroles – a well-known symbol of the holidays. They’re also a perfect dish to make to bring to just about any get together, whether it be with friends or family. And even more, they are the perfect dish to make when you are strapped for time but want something filling and delicious for dinner or lunch.

Now, just to be clear, this isn’t your mom’s normal casserole. It’s filled to the brim with nutrient dense ingredients that will keep you full and warm you right up as the temperatures keep dropping (can’t we just have summer back?!). This dish is also one that you can get creative with – fill it with any veggies you want to create your own big hit casserole.

What sets this casserole aside from others is that we’ve made sure to account for a healthier lifestyle. Instead of pasta, we used loads of spaghetti squash. Instead of milk or cream, we used coconut milk. These little changes may seem small, but their impact will last! But when all the flavors from this dish settle in, you won’t be able to think about anything else except how delicious it tastes.

Ingredients

3-4 cups cooked spaghetti squash cut spaghetti squash in half and lay in pan with 1″ water, cook on 350F for about 1 hr until soft.

8 pieces cooked duck bacon chopped in pieces or bacon bits

1 1/2 cups steamed broccoli

1 cup coconut milk (from a can)

1 medium egg

1 tsp. sea salt (or to taste)

1 tsp. garlic powder

Pepper, to taste
