We love all things breakfast. Honestly, if it was acceptable to eat breakfast all day long, we totally would. From oatmeal to eggs, breakfast is so great since it’s delicious and give you loads of energy to tackle on even your most busy day.

One beloved breakfast food is the classic egg in a hole. There’s something amazing about this simple dish that has the little ones excited whenever it’s on the menu. If you follow the paleo lifestyle or are reducing your gluten intake, we have the perfect recipe to put a new spin on this classic breakfast. And trust us, you’ll want to make it for breakfast, lunch AND dinner. 

Note: if you are using a full sweet potato, you can make up to four servings. If you don’t need to make that much, you can just save your spiralized sweet potatoes and use them in another dish!


1 sweet potato, medium

2 tbsp. coconut oil, divided

1 tsp. garlic powder

S&P to taste

2 eggs

2 egg whites, divided



  1. Cut the end off the sweet potato. Using a spiralizer, create noodles. Trim noodles too make sure they aren’t too long.
  2. Heat a medium-sized pan with 1 tbsp. coconut oil on medium heat. Add sweet potatoes, garlic and S&P and cook for 5 – 10 minutes, until potatoes are softened. Once done, add sweet potatoes to a bowl.
  3. Rinse the pan off. Return to low medium-low heat and add 1/2 tsp. coconut oil. Add a small mixture of the sweet potatoes and for into a nest, making a hole in the middle for the egg. Pour 1 egg white on top of the sweet potatoes.
  4. Crack an egg and cook for approximately 10 minutes, until cooked to your liking.
  5. Repeat with the remaining ingredients and SERVE
