Dinner just got drool-worthy. Say hello to turmeric chickpea salad sandwiches.

This vegan chickpea salad packs the one-two punch: deliciously flavored while also giving you tons of nutrients to fuel your body. Utilizing turmeric helps fight against inflammation and also helps give this salad the pop of color we all know and love.

All you need is about five minutes to whip this salad up, making it perfect for sandwiches at any point throughout the day. The perfect sandwich for the kids to take to lunch or when you only have a few minutes between running errands. We hope you enjoy!

Ingredients

1 can chickpeas, drained

1/3 cup vegan mayo

1/2 tsp. turmeric

1 clove garlic, minced

S&P, to taste

 

Instructions

  1. Place all ingredients into a food processor and pulse until well blended. You want to keep a few chunks to maintain a good texture.
  2. Slather on some bread and top with anything of your choice. ENJOY!
