This. Dip. Is. Amazing.

No, really. It’s probably one of the best recipes we’ve ever found. It’s full of flavor and beyond belief creamy – all without any animal products! The secret to the ultimate creamy texture? A mixture of tofu and cashews. Blend them together and you can make just about anything a creamy dream that vegans and non-vegans alike will absolutely love.

This dip is so simple, too. Simply soak your cashews the night before (or even the morning before, if you’re making it for the evening). Then blend up your cream mixture, warm up your spinach and water chestnuts and mix everything together. Top with some smoked paprika and a drizzle of oil, and you’ve got yourself a true crowd pleasing dish. Plus, with tons of sporting events happening, this is the perfect party snack to whip up if you want to impress your friends and family. Trust us – it will be gone in no time with people begging you to make more.

Ingredients

1 package tofu (soft is best, but firm will do fine)

3/4 cup raw cashews, soaked overnight and drained

1/4 cup nutritional yeast

2 tsp. apple cider vinegar

1/2 tsp. salt

1 package frozen spinach, thawed and SQUEEEEEZED OUT (super important!)

1 small onion, diced

2 medium cloves garlic, minced

1 can water chestnuts, diced

Olive oil & smoked paprika, for garnish

 

Instructions

  1. Add the tofu, soaked cashews, nutritional yeast, vinegar, and salt to the bowl of a high-speed blender and blend until it forms a smooth puree. Blend until you get a nice pudding-like texture. If you need to, add a little bit of water or coconut milk to get the consistency you want.
  2. Add the oil, onions and garlic to a frying pan and sauté over medium-high heat until the onions are a caramel brown color and have reduced to about 1/4 of their original volume.
  3. Add the water chestnuts and spinach and, sauté to heat through. Turn down the heat and add the tofu and cashew puree. Stir constantly until the spinach dip is heated through. Adjust salt to taste.
  4. Drizzle with a little olive oil and then dust with smoked paprika. Serve with vegetables and bread. ENJOY!
