Cookies for Breakfast? Sign us up!

These superfood-packed cookies are loaded with fiber, healthy fats, plant-based protein and are perfect to keep on hand for busy mornings. They’re also gluten-free, refined sugar and oil-free! Here’s the details:

Ingredients:
1 cup oat flour or all purpose gluten-free flour
1/2 cup rolled oats
1/4 cup almond flour
1/4 cup hemp seeds
2 tbsp flax meal
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp sea salt
1/2 tsp cinnamon
1/3 cup maple syrup
1 tsp vanilla extract
1/4 cup nut butter of choice (we used cashew)
1/4 cup apple sauce (or 1 ripe banana)
1/4 cup nuts/seeds/fruit (we used pumpkin seeds and unsweetened cranberries)

Instructions:
1. Preheat oven to 350F
2. Combine all the dry ingredients in a medium mixing bowl and stir until uniform/
3. Add in maple syrup, nut butter, apple sauce and vanilla and mix well until a solid dough forms. It might be a little sticky, but that’s okay!
4. Add in your choice of nuts/seeds/fruit and combine.
5. Stick the dough in the fridge for 15-30 minutes to chill (this will make it easier to roll)
6. Scoop 1-2tbsp size balls onto a lined baking sheet and flatten the cookies into thick disks - they won’t spread much.
7. Bake for 12-14 minutes until golden, let cool for 15 minutes before diving in!

Makes: 10-14 cookies depending on your scoop.
