Summer just isn’t summer without – WATERMELON. The juicy, sweet (and sometime so heavy you can barely pick it up) vegetable is one of the summer’s best known and loved staples. Yes, vegetable – watermelon is actually similar to cucumbers, squash and pumpkins. Of course watermelon is now in it’s peak season, and we just can’t get enough. Not only does it quench your thirst, but watermelon can also quench inflammation that contributes to conditions like asthma, atherosclerosis, diabetes, colon cancer, and arthritis.

While we love enjoying watermelon just in slices or cubes, we wanted to switch things up a bit! These watermelon pizzas are so fun to make – the possibilities for toppings is really endless. Fruit & Coconut Yogurt

Slice a round of your watermelon, then cut into 8 “pizza” slices. Tip: Place your coconut yogurt in the freeze for 10 – 20 minutes before using to let it thicken up. Spread the coconut yogurt over your slices. Top with a few blueberries, blackberries and raspberries. Sprinkle chopped pistachios and drizzle some honey. 

 

Feta, Mint & Balsamic

Slice a round of your watermelon, then cut into 8 “pizza” slices. Crumble feta cheese and fresh mint on the pizza. Drizzle balsamic glaze and DIG. IN.
