We think beets don’t get enough credit. These root veggies are a powerhouse when it comes to health benefits that you can see inside AND out. And now that they are in their peak season, we thought it was necessary to give them the spotlight for our seasonal recipe.

Why are beets so good for you? Well, to start, they are incredibly rich in a variety of essential vitamins and minerals. To name just a few, beets are a great source of Folate, Manganese, Magnesium, Iron and Vitamins C and B6. These vitamins and minerals work within your body to produce some amazing benefits. Adding beets to your diet can help reduce inflammation (more coming on this topic tomorrow!), support your heart, and protect your digestive, brain, and eye health. With all of these benefits, who wouldn’t want to enjoy these vibrant veggies!?

On top of these amazing health effects, we found a fun way to enjoy beets. Meet the beet fritter! With just a few simple ingredients and a dangerously delicious herb cream sauce, you have a great way to reap the benefits that beets have to offer.

A little tip: if you have a food processor, you will save a load of time by using the grater attachment to grate your beets. If not, using a hand grater works well here too. We’re all about saving time, so we wanted to share that little secret with you to hopefully save you some time as well!

Ingredients

Herb Cream Sauce – 

1 cup raw cashews (soaked in warm water for 30 minutes)

1/2 cup water

2 1/2 tbsp. fresh lemon juice

2 tbsp. extra virgin olive oil

2 cloves of garlic, minced

2 1/2 tbsp. minced dill

2 1/2 tbsp. minced parsley

fine sea salt an freshly ground black pepper

Beet Fritters – 

2 cups shredded beets (from about 3 small beets)

3 tbsp. minced parsley

2 tbsp. minced dill

1/2 cup diced red onion

1/2 tsp. fine sea salt

1/2 cup almond flour

2 eggs, lightly beaten

2 tbsp. water

3-4 tbsp. high heat oil (we used coconut oil)

Minced fresh herbs for serving (optional)
