This coconut lime chicken is a one-stop, ONE POT dish of deliciousness. On top of being insanely tasty, you can have this dish ready in under 45 minutes and you probably have the majority of the ingredients already in your kitchen. And by cooking this meal completely in one skillet, you save time cleaning up after you’ve enjoyed this filling meal with loved ones.

What gives this dish that perfect pop of flavor? Pacific free-range chicken stock, of course! This broth is rich and full of flavor – the perfect addition to this coconut lime sauce. The possibilities don’t stop there with this broth though. Use it for sauces, soups, stews or even drink it by itself when it’s cold out! It’s truly a must-have for your kitchen. Ingredients

4 skinless boneless chicken breasts, about 1 1/2 pounds

1/4 tsp. sea salt

1/4 tsp. black pepper

1 tbsp. coconut oil

1/2 cup red onion it came out to 1/2 onion for me, chopped

1 whole red chili chopped optional

1 cup organic chicken stock

2 tbsp. lime juice about 1 large lime

1 tbsp. chopped cilantro (or chives)

1/2 tsp. red chili flakes

1/2 cup full fat coconut milk from a can or coconut cream

1 tbsp. arrow root starch for paleo/whole 30 or corn starch mixed into 1 tbsp. water (optional)
