Who says tacos are only for Tuesday?!
We love a good taco, but sometimes we are looking for something on the healthier size. So instead of the typical tortilla or shells, we decided to top our taco “bowls” with zoodles! Zoodles – or zucchini noodles – are a PERFECT way to put a healthier spin on almost any dish.
Now, we’ve deemed this recipe paleo-ish because we did add in some black beans and fresh, organic AND non GMO corn to our bowls. So feel free to omit those if you follow a strict paleo lifestyle. And as always, have fun with it! These bowls can be filled to the brim with really anything you love in your normal taco. We hope you enjoy!
Ingredients
1 lb. lean ground beef
1 packet taco seasoning
2 medium zucchinis, spiralized
Toppings –
cherry tomatoes, diced
black beans
corn
anything you desire!
Instructions
- If you’re using corn – pop the full husk in the oven at 350 for 30 minutes. Let cool before shucking and cutting the kernels off.
- Warm black beans in a small pot. Take spiralized zucchini and lightly sautee them in a large pan until slightly warmed.
- Cook meat until almost cooked well through. Drain some of the liquid. Add taco seasoning and mix well until all the meat is coated with seasoning.
- Assemble your bowls – layer zoodles first then add your desired toppings. Finish with the meat and DIG. IN.
