It’s our first #seasonalsaturday of 2017! We hope you had a great time ringing in the new year with loved ones. We are celebrating the new year by whipping up a delectable side dish using winter squash.
Buttercup squash is a delicious winter squash varietal that is sweet in taste and creamy in texture. On top of its flavor, buttercup squash is also loaded with vitamin A, B, and C along with calcium, magnesium, phosphorous, and potassium. This recipe requires only 4 ingredients and takes approximately 5 minutes of active cooking time. With something as simple as that, it makes a perfect side dish to any meal. We hope you enjoy!
Ingredients:
1 buttercup squash
2 tbsp. olive oil
1 – 2 tsp. garlic powder
1/4 cup parmesan
Instructions:
- Preheat oven to 400 degrees F. Top a baking sheet with parchment paper or foil.
- Halve the squash and cut into slices. Mix together all ingredients in a large bowl.
- Line baking sheet with squash (pictured above) and bake for approximately 30 minutes, until parmesan starts to look crispy.
